Butterscotch Cake

August's bake now and it comes in the form of two things I utterly love in this world.... Cake. And butterscotch. So this cake is literally heaven, a dream, a masterpiece to me!


My friend and I actually made this together and the recipe originally was to make cupcakes but we thought we would make just one huge cake instead.

The recipe was from an Marks and Spencer's book, Easy Cupcake.

So here is 'Butterscotch Cake'...

What you will need:
 
175g/6oz plain white flour
1 tbsp baking powder
175g/6oz unsalted butter, softened
175g/6oz muscovado sugar
3 eggs, beaten
1tsp vanilla extract
 
2tbsp golden syrup
25g/1oz unsalted butter
2tbsp muscovado sugar.
 
We used golden syrup, butterscotch sauce, icing sugar and white chocolate hearts for the toppings.
 
What to do now:
 
1. Preheat oven at 190C/375F/Gas Mark 5.
Place 28 paper cases into bun tins or put 28 double-layer paper cases onto baking trays
If you are making one big cake, like we did, then grease and line a round tin.
 
2. Sift the flour and baking powder in a large bowl and add the butter, sugar, eggs and vanilla extract. Beat well until the mixture is smooth.
 
3. Divide the mixture into the 28 cases or pour into the big tin.
Bake in the preheated oven for 15-20 minutes or until they have risen, firmed and golden brown in colour. Transfer cupcakes to a wire rack and cool.
 
4. For the recipe's topping, place the golden syrup, butter and sugar into a small pan and heat gently, stirring, until the sugar has dissolved. Bring to the boil and cook, stirring, for a out one minute. Drizzle over the cupcakes and leave to set and then enjoy!

Ok, ok, ok so I know this isn't the prettiest of cakes (it definitely looks homemade) but oh my gosh, the taste is so worth it.
I love this cake so much. I have had this recipe book for years now and I have always wanted to make but never have because I am useless at remembering all of the delicious treats I want to make!
The cake is so soft and just oozes in butterscotch flavour. How we decorated it was by drizzling some golden syrup and butterscotch sauce on, a dusting on icing sugar and some white chocolate hearts.
 
This is definitely my kind of treat for sure so if you love butterscotch as much as me, then this is one for you!
