The Sweet taste of Strawberries

Since the Great British Bake Off (GBBO) has returned to our television screens, for the next few weeks I will be posting some of my favourite baking recipes in honour of it.

This week: Strawberry Mousse Cake.

Now, this recipe is by GBBO very own judge, Paul Hollywood! Taken from his 'Pies and Pubs' recipe book, this simple dessert is perfect for the summer time and for a quick, light treat for all of the family and friends.


Preparation Time: less than 30 minutes
Cooking Time: 2 hours or above
Servings: 8

  • Ready made Génoise sponge base
For strawberry mousse:

  • 1 x 135g packet of strawberry jelly
  • 450g strawberries
  • 2. 170 tins evaporated milk
To decorate:
  • 50g chocolate of your choice
  • strawberries
Preparation method:
  1. Line the tin with baking parchment. Place the ready made Génoise sponge base in a lined tin.
  2. Take roughly a quarter (or a bit more) of your strawberries, wash them whilst taking the green leaves off the top. Cut in half (or in three if they are large) and place around the edge of your tin. Place to one side.
  3. To make the mousse:break up the jelly and a table spoon of water and gently melt over a low heat. Once smooth and liquid, set aside to cool.
  4. Whilst the jelly is melting, squash the remaining of the strawberries to get its juices, leaving a few for decoration. You can use a fork or a spoon for this. Once done, sieve the squashed strawberries in another bowl to remove the seeds, creating a puree. 
  5. Using an electric whisk or hand whisk, whisk the evaporated milk for at least five minutes. It should go thick, bubbly and double in volume. Gently fold in using a spoon the liquid jelly, then fold in the strawberry purée. This should turn the milk into a pink colour.
  6. Pour the pink strawberry mousse over the sponge and strawberries. Don't worry if the it does not cover the top of the fruit.
  7. Place in the fridge for at least two hours to set. If you can, leave it over night.
  8. To decorate, melt your chosen chocolate over a heatproof bowl over a pan with simmering water in. Dip the remaining strawberries in the melted chocolate and place on a plate to cool and set.
  9. Pour the leftover chocolate into a paper piping bag (you can create this by rolling up parchment paper) and snip off the end/ Drizzle lines or whatever you would like to decorate the cake. Place to the side to set.
  10. Once the mousse has set, take it out of the fridge. Place the set chocolate and the chocolate covered strawberries on the cake. Serve and most importantly enjoy!

The finished product!!!
I used my left over chocolate and pour it into my Doctor Who mould,
you can do something similar if you would like
