Chocolate Toffee Cupcakes
Ok, ok I know it isn't Sunday but its only a day late!
Anyway, I haven't done a Sunday Baking Series recipe in ages and for that I apologise (been so busy getting back into the swing of uni). But isn't the Great British Bake Off getting intense now!
However, my series is back and boyyyy do I have a tasty treat for you today....
It is simple, easy and quick enough to make and bake so get ready for death by chocolate with homemade toffee!
Less than 30 mins to prepare, 15-30 minutes baking time
Ingredients
Chocolate cupcake
150g self raising flour
150g caster sugar
1 tsp baking powder
2 eggs
2tbsp cocoa powder or hot chocolate powder
Toffee
115g caster sugar
4tbsp iced water
Butter icing
Soft butter
Icing Sugar
Method
1. I am going for the all-in-one method, it saves time and cuts down on the washing up! Preheat oven at 180 Fan. Place 12 cupcake cases onto a baking tray (doubling on the case so there are two cases and not one).
2. Sieve the flour into a medium to large mixing bowl. Add the sugar, eggs, baking powder and cocoa powder and mix well until smooth. Add a little milk if the mixture is too stiff.
3. Using a tablespoon, spoon the chocolatey mixture into the cupcake cases and place in oven for 15-30 minutes until it is all cooked through. Leave to cool.
4. For the toffee, place the sugar in a small pan and place over a low heat. Add the iced water and stir until all of the sugar is dissolved. Allow to simmer for 5 minutes until it changes colour. Allow to cool for a bit, not too much in case it goes hard.
5. To make the butter icing, place the soft butter and icing sugar into a bowl and stir until it is all combined.
6. Cut a smallish hole on each cupcake (see image below to see what it should look like), it creates sort of a well at the top of the cake. Using a teaspoon, pour in spoonful of the toffee into the well and place the top of the cake you cut off on top. Add the butter icing so it covers the cut you made at the top and if there is any toffee left then drizzle it over the icing. And there you have it!

The soft cake with the toffee encased in it, with the cream like butter, it definitely get those taste buds tingling.
And the best thing about it, they don't take long at all to make.
It is a great recipe for parties or just as treats whilst you are crying over GBBO, it is so intense right now.
Well there you have it! An easy and simple cupcake with bags full of flavour!
