Mackerel with tomato sauce and salad
For my next recipe, I am going to do a savoury option that take roughly 20-30 minutes to prepare and cook. Although not likely to appear in Great British Bake Off, this recipe will get your taste buds turning (in a good way).
This weeks recipe: Mackerel in a tomato sauce with salad.
It is a perfect meal for the summer time. quick and easy to make and cook, you can substitute mackerel with another fish or even some meat.

RECIPE:
Preparation Time: 10- 15minutes
Cooking Time: 10 minutes
Servings: 4-6
Ingredients:
- 2 large ripe tomatoes
- 1 table spoon of olive oil
- 2 cloves of garlic, peeled and crushed
- 2 sprigs of fresh thyme, leaves picked
- 3 x 125g tins of mackerel in tomato sauce
- sea salt
- black pepper
- freshly prepared salad
- Wash and dice the tomatoes. Peel and crush the garlic and cut the thyme in smallish sizes
- place a frying an on a medium heat, add the oil.
- Add the chopped tomatoes, garlic and thyme and fry for 5-10 minutes. They should be soft. Stir occasionally.
- Stir in the mackerel with the sauce and warm through.
- Season how you wish and place to side.
- Keep the frying pan and add a little bit more oil in. Get a couple of slices of bread.
- Making sure the oil is hot, place the bread in the pan and fry each side for about 3-5 minutes or until golden brown.
- Serve the mackerel with the fried bread and freshly made salad. Enjoy!
